It is essential to support juice velocity in the tubes in 1.5 m/s to 2 m/s; if the juice velocity is very low, OHTC is low and heater is susceptible to scaling of the tubes. There will be a high-pressure drop across the heater if the juice velocity in the tubes is very high. It results in a higher pumping loading on juice pumps.
Juice heaters have a steel-fabricated tubular shell structures, which consists of an assembly of tubes. Juice basically go around through the tubes and the vapour outside. Appropriate headers are there to force the juice to pass several times from bottom-to-top and top-to-bottom of the heater.
